Introduction
Food safety is an increasingly important and publicized aspect of veterinary medicine and public health. Our topics will include a review of the basics of procedures for meat inspection in this county, food safety on the farm and during processing, HAACP regulation, and clinical aspects of the major foodborne diseases of significance to veterinary medicine. Whenever possible, we will also offer field trips to visit a slaughterhouse, most likely in Sun Prarie. These trips are optional, but should be quite enlightening and educational for those of you who have ever seen an abattoir.

Course Schedule
The food safety course will meet every Monday and Wednesday from 11:00-11:50 in room 2360 through March 8.

Guest Lecturers
There will be several guest speakers during he course who will provide an overview of:
a. food safety from the perspective of a USDA inspector
b. rendering as related to pet food production
c. the responsible use of antibiotics in food animals under AMDUCA
d. bovine tuberculosis and paratuberculosis as both veterinary and human health concerns
e. BSE as a public health concern and regulatory policies used by the USDA to address the risk for BSE in the U.S.
f. zoonotic disease implications and control from a physician's point-of-view
g. the roles and responsibilities of regulatory veterinarians in the management of public health problems and your relationship, as a practitioners, to these governmental veterinarians
h. zoonotic disease of exotic pets

The midterm exam will cover the cover the material presented by Dr. Pinckney on food safety, meat inspection and foodborne diseases, and the guest lectures from the first section of the course. The final exam will cover the material presented by Dr. Olsen on zoonotic diseases and the guest lectures in the second section of the course.
