Welcome to the food safety web page at the University of Wisconsin School of Veterinary Medicine. This web page is designed to provide supplementary information for the Veterinary Food Safety course offered in the third year of courses at the School of Veterinary Medicine. Food safety is an increasingly important and publicized aspect of veterinary medicine and public health.

The food safety course will include a review of the basics of procedures for meat inspection in this county, food safety on the farm and during processing, HAACP regulation, and clinical aspects of the major foodborne diseases of significance to veterinary medicine. Whenever possible, we will also offer field trips to visit a slaughterhouse, most likely in Sun Prarie, WI. These trips are optional, but should be quite enlightening and educational for those of you who have ever seen an abattoir.
